Chocolate Buttercream Icing
2 sticks soft (not melted!) butter
1 box (or 4 cups) powdered sugar
3/4 c cocoa
2-3 tsp vanilla
1-2 T milk
In a bowl, mix together the cocoa, butter, and vanilla. Add sugar in 1 cup quantities slowly, mixing well before adding more. Beat in milk until light and fluffy and then try not to eat it all and, instead, set aside. (Good luck with this.)
Cake
3 eggs
2/3 c sugar
1 tsp vanilla
1 c mayo / Miracle Whip
1-1/3 c water
2 c flour
2/3 c cocoa
1-1/4 tsp baking soda
1/4 tsp baking powder
1. Set oven to 350*
2. Lightly grease either 2 9″ round pans or a 13×9″ pan.
3. In a bowl, mix the flour, cocoa, baking soda, and baking powder. Set aside.
4. In another bowl, mix the sugar, vanilla and eggs (one at a time) unit fluffy and light.
5. Mix in mayo to the sugar mixture on low until blended. Alternate adding small amounts of the flour and then the water until mixture everything is complete.
Bake at 350* for about 30 minutes (if round pans) or a little longer if using the 13×9. Let cool before adding icing.
Enjoy!
I even add mayo to box mixes, keeps them SO moist.
